Late Vermont winter days with the sun high in the sky followed by cold nights create the perfect environment for our regal maple trees to release their sap. Tapping the trees and collecting the sap with buckets is a generational tradition which brings people together working the land. The sap is gathered and boiled to create the sweet elixir of maple syrup. The feeling of comfort and the sweetness of life is what I think of when I drink this delicious medium roast.
